Bubur Pedas is a traditional meal of west-borneo especially in sambas region. If we meet sambas people and ask them about their traditional food, they will absolutely mention Bubur Pedas as their traditional food. Eventhough its named Bubur Pedas, the tastes is not spicy at all. Sambas people said that Bubur Pedas is the king of porridge, because all of the ingredients blend into one. There are 3 steps for making Bubur Pedas, from preparing the food materials, choosing the vegetables and preparing the refined ingredient.

According to the name, the essential material is rice. First of all we wash the rice. After that we dry the rice. When the rice dry, we fry the rice without using oil. We fry it until the rice become yellow. After a while, it will become yellow, we have to collide it into become refined. While we collide the rice, we do the same step for the coconut. The food material  ready to cook. Then  we can continue to the second step.
Bur – das, its popular name, contains many vegetables. Long time ago, sambas people said that the original recipe of Bubur Pedas contain 40 vegetables. But in this article, I only mention some of it. You can add another vegetables if you like. The vegetables that contain in Bubur Pedas such as large frog, long bean, sprout, and fern leaves. After we choose the vegetables, we should wash it and then cut it into small pieces.
The refined ingredient is the soul of Bubur Pedas, without the ingredient Bubur Pedas will become tasteless. The refined ingredient for Bubur Pedas consist of many spices. Some of the spices are like  garlic, onion, pepper ,etc. Finally, after all the ingredient is ready. We start to make Bubur Pedas. First, boil the water with refined spices. Mix the refined spices with water. After it mixed completely, add the refined rice and coconut. Stir it until it become a good porridge. After the porridge ready, add the vegetables that has been wash and cut. Stir the porridge and the vegetables until the vegetables cooked completely.

Finally, Bubur Pedas has ready to serve while it is hot. You can add some topping in your Bubur Pedas. The topping itself has many kind like chip, meat, and fried onion. For final taste you can add soya and chili. Although the procedure to make Bubur Pedas is very long but you can taste our traditional food.
